Our partner Ginkakuji Onishi is based in Kyoto since 1953. With the accumulated knowledge over the past decades, Onishi has numerous wagyu experts who select more than 10.000 wagyu per year from Hokkaido up in the north to Okinawa down in the south.
Our program Onishi Selection consists on selecting not by brand but by carcass, selecting the carcass that will suit the best our customers demands. This selection is done by farm since Onishi has a long relationship with many farmers all over Japan.
