Whole, the shoulder is presented without the pallet (bone of the scapula) but always with the butt. You can leave it whole to be roasted on the bone. As an option, at no extra cost, you can choose a presentation of the shoulder "cut into cubes for stir-fry" or "boneless, rolled and tied for roast"
